Matcha:

Matcha is the tea experience from Japan. Matcha is made from the most delicate parts of the top shoots of the tea bush and has the most intense green colour.

Brewing matcha tea, like the Japanese tea ceremony, is a pure exercise in mindfulness as you dose the luminous green powder into your most beautiful bowl with great concentration, pour in water that should not exceed 80ºC and gently whisk the mixture with a bamboo paddle intended for this purpose.

In addition, matcha can be used in many recipes for desserts or smoothies, where the fresh green colour is as seductive as the flavour.

Matcha is very rich in antioxidants and amino acids. This is partly due to the cultivation method, where the tea bushes are covered in the last weeks before harvest, and partly due to the nature of matcha tea: when you drink a cup of matcha, it consists of powdered tea leaves and water - unlike a regular cup of green tea, where the tea leaves are thrown away.

Matcha energises you, while the ritual of brewing it provides a respite from the stresses of everyday life. When you enjoy a cup of matcha, it nourishes your body and soul.

Japanese from Kissa, which combines the authentic with the hyper-modern.

Chaplon, which is grown under strict quality and sustainability requirements in Sri Lanka and has the most amazing flavour.

Green tea

Green tea has become a popular drink due to its health-promoting properties. However, green tea is not only healthy, it's also delicious, especially when it's of excellent quality and carefully selected, like the flavours we have in store.

Green tea has undergone less post-harvest processing than black tea: it is only lightly fermented and the leaves are dried, heated and hand-rolled. This preserves a fresher flavour than black tea and ensures the high antioxidant content.

Green tea retains its flavour best if brewed with water heated to 75ºC and steeped for 3-4 minutes.

Walter's recommends:

Chaplon's wonderful blend Full Moon, where the green tea from Sri Lanka is flavoured with lime, lemongrass and Chinese blackberry leaves.

Mountain Flower is another Chaplon variant that contains both green and black tea and is flavoured with flowers and citrus and mango oils.

Chaplon also has a blend of white and green tea flavoured with quince and dried apple pieces.

NUTE also has a fantastic green tea with flavours of strawberry, chamomile and dandelion root.

White tea:

White tea is the least processed form of tea, and therefore the tea with the highest antioxidant content.

White tea is made from the tender shoots of the tea plant, which are only just dried. Since white tea is not fermented, it has a fresh and mild flavour.

White tea is the light and delicate tea, and becomes absolutely fantastic if brewed in water heated to 75ºC and steeped for 7-20 minutes.

White and green quince from Chaplon with dried apple pieces and quince oil.

Nordic Night from NUTE, which is a white Chinese tea with flavours such as lemon myrtle and white cornflower.

Black tea:

Black tea is the most classic. Black tea comes in a myriad of flavours and the high level of processing means you can really taste the craftsmanship behind a high-quality black tea.

Black tea is made from tea leaves that are dried, rolled, fermented and roasted after harvesting.

Black tea needs to be brewed in slightly warmer water than the other types and is perfect at 90ºC with a steeping time of 3-4 minutes.
